Poêle sauteuse de Buyer Prima Matera DB6230-16

The de Buyer Prima Matera Saute Pan is a 16 cm (6.25") round copper pan designed for precise temperature control and rapid response to heat changes. Constructed from approximately 90% copper with a 10% stainless steel interior lining, the pan combines the thermal conductivity of copper with the durability and food-safe surface of stainless steel. Its compact size and balanced weight make it suitable for delicate preparations such as sauces, reductions and tasks that require quick adjustments of heat.

Advantages

Copper provides very fast and even heat distribution, allowing fine control when sautéing, frying or reducing sauces. The stainless steel lining protects the copper from direct contact with food and simplifies maintenance while preserving the pan's high thermal responsiveness. The pan is compatible with induction cooktops and offers professional-level performance in a small, manageable format.

Suitable for

• Sautéing vegetables and aromatics
• Preparing delicate sauces and reductions
• Quick frying and browning of small portions

Key specifications

• Diameter: 16 cm (6.25")
• Material composition: ~90% copper exterior, stainless steel interior lining
• Weight: 1.13 kg
• Color: beige (interior/styling accents)
• Induction-compatible base

How to use

Preheat the pan on the chosen heat source and adjust the flame or power to reach the desired temperature quickly; copper responds rapidly so small adjustments are usually sufficient. Use utensils suitable for stainless steel interiors to avoid scratching the lining. For sauces and reductions, work over medium to medium-high heat and monitor temperature closely to prevent overcooking.

Recommendations

Hand wash with a mild detergent and soft sponge to preserve the copper exterior and stainless steel lining. Dry immediately to avoid water spots and follow regular polishing if you wish to maintain the copper appearance. Avoid abrasive cleaners that can damage the surfaces.
