Ensemble de couteaux KAI Shun Premier Tim Mälzer 2 pièces

Elevate your culinary experience with the KAI Shun Premier Tim Mälzer 2-Piece Knife Set, a collaboration between the renowned Japanese cutlery brand KAI and celebrated chef Tim Mälzer. This set combines traditional Japanese craftsmanship with modern design, offering exceptional performance and aesthetic appeal. Each knife is forged from VG-MAX steel core with 65-layer Damascus cladding, achieving a hardness of 61±1 HRC for outstanding edge retention. The Tsuchime (hammered) finish reduces drag and prevents food from sticking, while the symmetrical walnut wood handles provide a comfortable, balanced grip. Made in Japan, these knives are a testament to precision and artistry.

Advantages

This set includes two essential knives: a 20 cm Chef's Knife (TDM-1706) and a 16.5 cm Utility Knife (TDM-1701), covering a wide range of kitchen tasks from chopping and slicing to peeling and trimming. The double-bevel edge with a 15° angle per side ensures razor-sharp cuts, while the full-tang construction offers durability and balance. The walnut handles are not only ergonomic but also add a touch of elegance to your kitchen. Designed by Tim Mälzer, these knives reflect his expertise and passion for cooking, making them ideal for both professional chefs and home cooks.

Recommendations

To maintain the longevity and performance of your KAI Shun Premier knives, always hand wash them with mild detergent and dry immediately. Avoid cutting on hard surfaces like glass or stone; use wooden or plastic cutting boards. Regular honing with a ceramic rod will keep the edge aligned, and professional sharpening is recommended when needed. Store the knives in a knife block or on a magnetic strip to protect the blades.
